Well it is no secret that I love a good salad whether there’s a metre of snow outside or the sun is shining.  Not everyone feels the same way , I know, but summer is the best time to leave stodge behind and go raw.  Ayurvedic wisdom suggests that not only is there a right season for raw food but also a right time of day – the middle of the day is when our digestive “fire” is supposed to be at it’s peak and so most able to digest raw foods. So, it’s a “no-brainer” salad makes a perfect summer lunch-time choice!

2 handfuls of rocket
5 baby plum tomatoes, halved
1 baby yellow pepper, sliced
Handful of sugar snap peas, halved
½ an avocado, sliced
1 sun-dried tomato, finely chopped
Large chunk cucumber, peeled and sliced
1 tbps. Soya beans
¼ pack of firm tofu, cubed
1 tbps. tahini
Juice of ½ lime

Start assembling this salad by scattering the rocket leaves across your plate.  Then start layering the other salad ingredients on top.  I like to create an avocado “rose” as the centre-piece and then scatter the tofu cubes around the outside.  Just before serving, pour the lime juice over the entire salad and then drizzle with tahini.
