2 handfuls of rocket

2 sticks of celery, finely sliced

1 Pink Lady apple , finely sliced

Juice of 1 lime

1 dsp. tahini

¼ pkt. firm tofu cut into cubes

1-2 tbsps. walnuts, broken

Salt and freshly ground black pepper

1 dsp. pomegranate seeds

1 dsp. pollen grain

Place the rocket on a plate and then cover with the celery and apple.  Pour half the lime juice over the apple and then scatter the tofu over the top.  Blend the rest of the lime with the tahini and drizzle over the salad before finishing with the walnuts, pomegranate and pollen grain.
