Festive Bircher’s

I love breakfast and I look forward to preparing myself a delicious and nutritious meal to start my day. I often get asked what I eat for breakfast so I’m currently putting together a little e-book – my little book of breakfasts – which should be ready early in 2016.

However, I thought I’d share my festive Bircher’s Muesli recipe with you now so you can enjoy it over the Christmas break.  The recipe below serves 1 person but if you want to make up a larger batch it will keep well for at least 3 days if stored in your fridge.

Festive  Bircher’s Muesli Serves 1
  • 30g oats
  • 1 dsp sunflower seeds
  • 10g milled flaxseeds
  • 10g flaked almonds
  • 1 dsp dried cranberries
  • 1 tbsp. unsweetened apple puree or 1 apple grated
  • ½ tsp. cinnamon
  • ½ tsp. ground star-anise
  • ¼ tsp sea-salt
  • 130ml almond milk
  • Serve with:
  • Pecan nuts, fresh fig or Pomegranate seeds
Place all the ingredients in a cereal bowl.  Stir well and leave in the fridge overnight. Serve with chopped pecan nuts, sliced fig and/or pomegranate seeds.
