This elevates the humble carrot to something quite special – if you can’t get hold of Heritage then try Chantenay. Although, to be honest, any old carrot will do!!!!

Roasted Heritage Carrots
500g Heritage Carrots, sliced lengthways

1 red chilli, finely minced

1 tsp. smoked paprika

1 tbsp. pink peppercorns, crushed

2 big handfuls of walnuts

½ block of Greek feta, crumbled

2 handfuls of curly parsley, finely chopped.

Sea-salt & black pepper to taste

  • Preheat oven to 200°C
  • Lightly oil a baking tray and throw in the carrots, then little brush with oil too.
  • Add the paprika to a small, fine, sieve and sift over the carrots
  • Roast for 10-15 minutes or until the carrots are tender and look “wrinkled”.
  • Scatter the chilli, walnuts and feta over the carrots and roast for a further 5 minutes.
  • Serves 4 as a side dish or 2 for a main dish.
