Healthy food can also be comfort food – this is it! Vary your greens according to seasonal availability but this is my current favourite combination right now.

2 handfuls Tenderstem

2 handfuls Asparagus tips

2-3 Baby cucumber

4-6 tbsps Herby Ranch Dressing

1-2 bundles Soba Noodles

2 handfuls Cobnuts, toasted & halved

Fresh coriander, roughly torn

Chives, finely chopped

Serves 2

Place the asparagus and tenderstem into a steamer.

Slice the cucumber and prepare the herbs.

Then add the noodles to a pan of boiling water, turn down the heat and simmer for 4 minutes.  When cooked, drain the noodles and stir in a few drops of olive oil.

Working quickly, put the noodles in the bottom of each bowl, then layer with vegetables and dressing before topping with the herbs and toasted Cobnuts.
