Creamy, ranch dressing – what’s not to love?  Well, for me it’s the cream really!  But, step forward my favourite substitute, aqua faba.  This dressing is oh so creamy, without the cream. I know I’ll be making this all summer long.

120ml aqua faba

40ml lime juice

3-4 tbsps avocado oil

4 tbsps tahini

½ tsp. Dijon mustard

1 tsp. white balsamic

Small bunch chives

30g bunch basil leaves

1 clove garlic (blanched)

Sea-salt & freshly ground black pepper

Pour the aqua faba, oil, tahini and lime juice into a high-speed blender and whizz for around a minute or until the liquid has thickened.  Add the remaining ingredients and blitz until silky-smooth. This will keep for at least 3-4 days if stored in a glass jar in the fridge.
