Oat Layer:

20g chia seeds

10g sunflower seeds

30g ground almonds

40g oats

1 tsp. almond extract

¼ tsp. salt

250ml unsweetened almond milk

Fruit Layer:

150g frozen cherries, defrosted

Coconut Layer:

3 tbsps. coconut cream

½ tsp. vanilla extract

½ tsp. honey (optional)

 

Fruit & toasted, flaked almonds to serve

Add the seeds, ground almonds, oats, almond extract and salt to a glass storage jar. Gradually add the almond milk, stirring all the time until you have a well-blended mixture.   Refrigerate overnight to allow the mixture to thicken.

To assemble, give the chia/oat mix a stir, adding a touch more milk if necessary and then add 2 spoons each to glass jars or bowls. Next create a fruit layer; roughly chop the cherries and spoon over the oats followed by the coconut cream.  Finish with a final layer of the oat mix, top with extra fruit and scatter with toasted almond flakes.
