Dank, dreary weather calls for bright, cheerful food BIG on flavour; this is it.  I don’t know why I gave Nik 2 x “mansize” portions for lunch as I would love another bowl now!

2 tbsps. sesame oil

2 shallots, sliced

3 sticks celery, sliced

1 head broccoli, broken into small florets

1 red pepper, sliced

2 large carrots, julienned or finely sliced

1 cup edamame beans

1 red chilli

225g bag jumbo king prawns

Stir-fry Sauce:

4 tbsps. tamari sauce

2 cloves garlic, crushed

Thumb –size piece ginger, peeled & grated

1 tsp. honey

3 tbsps. lime juice

1 tsp. 5-spice seasoning

 

Parsley, finely chopped

In a small jar, blend together all the ingredients for the sauce and put to one side.

Heat the oil in a deep, lidded frying pan, then fry the onions and celery for a couple of minutes. Next add the broccoli, pepper and carrots. Stir with energy for a minute, then add the chilli, edamame beans and sauce.  Scatter the prawns over the top, place the lid on and leave to simmer for 2 minutes.  Serve to warmed bowls or onto a bed of brown rice.
