Using white chia seeds elevates this simple chia pudding to an elegant-looking dessert. But despite a decadent appearance, the combination of chia seeds, coconut oil, pineapple and ginger mean that this dessert packs a nutritious (and delicious) punch!
Ingredients:
50g chia seeds
250ml coconut milk 2 tbsps. coconut cream 2 tsps. coconut oil |
Juice & zest of 1 lime
2 tbsps. finely chopped pineapple 1 tbsp. honey 2cm piece of ginger, peeled and grated |
Add everything except the chia seeds and lime zest to a tall beaker and blend well with a stick blender. When the mixture is smooth and slightly frothy add the chia seeds and blend again. Pour into syllabub glasses and refrigerate for 4-6 hours.
