Many people assume that I hate Christmas which is actually not true at all.  But I do prefer Christmas on my own terms and this includes the freedom to eat whatever I choose!  Not eating a traditional Christmas dinner has never been a concern of mine, but I’ve sensed over the years that it can really upset other folk, who seem genuinely disappointed for me that I won’t be tucking in to lashings of turkey and sausage!  But they can spare their sympathy as, except from a bleak Christmas at Aconcagua base camp, I’ve normally enjoyed special and delicious Christmas meals, which have been anything but traditional.  However, this year I’ve been on a mission to use festive ingredients to create some different dishes.  I’m really pleased with what I’ve come up with and feel proud to share them with you.  I’d love to know what you think, meanwhile I truly hope you will enjoy my new festive recipe collection.
