In my previous post I flagged up the mood boosting benefits of chocolate. It is quite possible that some of you may have a bar of chocolate lurking around that you’ve got simply no idea what to with; so I’ve come up with a recipe for you!
My favourite recipe tester ate the lot so I have no idea what this tastes like – do let me know!
2 crisp apples (e.g Gala or Pink Lady)
2 tbsps. hazelnuts, chopped Zest of ½ lemon ½ tsp. cinnamon ½ tsp ground nutmeg |
½ tsp allspice
1 tsp. coconut oil or butter Pinch of sea-salt 15g dark chocolate, finely chopped Coconut yoghurt |
Preheat the oven to 200ºC. Quarter the apples, then cut each quarter into thin slices and arrange in an overlapping layer in lightly oiled oven proof dish. Pour the spices into a fine sieve and shake over the apples to “dust” each piece with mix. Mash together the butter/coconut oil and lemon zest and then dot flecks of this mix onto the apples. Scatter with the hazelnuts and the tiniest pinch or so of sea salt and pop in the oven for 10 minutes or until the hazelnuts are golden and the apple pieces have softened. Scatter the chocolate on top and return to the oven for a couple of minutes until the chocolate melts into the apples. Remove and serve immediately with a generous dollop of coconut yoghurt.
