A marinade can elevate simple plain foods to flavour packed special treats in just 30 minutes.  This quick and simple marinade is perfect for tofu, tuna steaks or prawns.

1 small red chilli, finely chopped

2 firm plum tomatoes, diced

1 clove garlic, crushed

1 tbsp. sweet miso

4 tbsps. cold-pressed walnut or olive oil

2 tbsp. lime juice

2 handfuls of fresh herbs (parsley, basil or coriander)

Salt and freshly ground black pepper

Add everything to a small blender and whizz until you have a thick, pulpy mixture.  Stored in the fridge this will keep for 3-4 days.
